I have known Alan for over 30 years. I think its fair to say that he put me through my paces, particularly in the early days. We went from the local village butchers supplying meat to Gleneagles Hotel on odd occasions to becoming their main supplier. This spawned a network of the best Scottish hotel accounts which allowed us to grow at a very fast pace, we will always be thankful for this.
Alan made us sit up and take notice of the fact that things were changing in the industry and he led the way in ensuring that his kitchen team focussed on the end product rather than the heavy-lifting element of food preparation. The number of top chefs who worked under Alan's leadership is very extensive indeed and as such he was never one to hold them back by sowing seeds of doubt about their career moves, he always encouraged them to move onwards and upwards.
Alan is one of the UK's best respected food-industry leaders and his warmth as a person coupled with his willingness to learn has meant that he moved from the Kitchen to front of house with relative ease. Very few people in our industry have his breadth of knowledge, nor his list of connections.
